1 C penne
1 1/2 T. butter (divided)
small fresh mushrooms
6 cherry tomatoes
salt
1 t. dried oregano

start your pasta cooking, the sauce will take about the time required to boil your pasta. as such, plan ahead and get the water boiling while you clean/trim your veg.
- clean/dry mushrooms
- dice tomatoes
- melt butter in frying pan over medium heat
- add mushrooms, and saute until almost completely cooked through
- add tomatoes
- add oregano and salt. toss to mix with butter and coat mushrooms and tomatoes
- heat tomatoes through and allow them to break down some in the heat
- rinse pasta, return to pan with 1/2 t. of butter (or olive oil)
- add cheese to pan, allow to melt and stir to coat mushrooms and tomatoes evenly with melted cheese.
- put pasta in bowl or on a plate.
- spoon sauce over pasta
